Tortelloni salad with garlic and lemon – incredibly simple and delicious

Ingredients for 6 servings:

  • 800 g fresh tortelloni from the refrigerated section (cheese tortelloni)
  • 2 lemons, juice
  • 4 garlic cloves
  • 8 tbsp olive oil, best
  • 1 tsp sugar
  • salt and pepper
  • 1 chili pepper(s), fresh, diced without seeds

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 5 minutes; Total time approx. 3 hours 20 minutes

A quick-to-prepare salad that will be a hit at any barbecue!

Heat the tortelloni in hot, salted water according to the package instructions, then drain in a large sieve and let cool. Squeeze the lemons. Peel the garlic cloves and press them through a press. Place both in a tightly sealed salad bowl and mix with sugar, olive oil, salt, and pepper to make a dressing. Add the lukewarm to completely cooled tortelloni and mix everything together. Add a few fresh chili cubes, if desired. Turn the bowl occasionally while it marinates. The salad tastes best when it has marinated for a few hours. Season to taste with a little more lemon juice before serving.
