Turkey schnitzel with mango

Ingredients for 4 servings:

  • 2 mangoes, ripe
  • 100 g cheese (Gouda), medium-aged
  • 4 tsp mixed herbs, chopped
  • 4 turkey schnitzels (150 g each)
  • 2 tbsp oil
  • salt and pepper
  • curry powder
  • Paprika powder, sweet

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel the mangoes and cut the flesh into wedges, removing the pit. Remove the rind from the Gouda cheese, finely grate it, and mix it with the herbs. Rinse the schnitzels and pat them dry with kitchen paper. Preheat the oven to 180°C (160°C fan-assisted oven). Heat the oil in a pan and briefly fry the schnitzels on both sides. Then remove from the pan, season with salt, pepper, curry powder, and paprika, and place in a greased baking dish. Arrange the mango wedges on top of the schnitzels. Sprinkle the herb and cheese mixture over the schnitzels and bake in the oven for about 10-12 minutes. Serve with a green salad with tomatoes and fresh baguette.
