Turkey strips with mascarpone

Ingredients for 3 servings:

  • 500 g turkey breast fillet(s) or turkey schnitzel
  • 1 m.-large zucchini
  • 1 bell pepper(s)
  • 2 carrots
  • 150 g broccoli
  • 250 g mascarpone
  • some oil, e.g. rapeseed oil
  • 2 tbsp tomato paste
  • salt and pepper
  • Milk

Cut the turkey into bite-sized pieces and cook in a large pan with oil for about 10 minutes, initially over high heat, then medium heat. Add the trimmed, washed, and finely chopped vegetables, if desired, and cook for about 5 minutes until al dente. Now add the tomato paste, fry briefly, then add the mascarpone. If the sauce is too thick, thin it with a little milk. Season to taste with salt and pepper. This sauce is delicious with pasta or (brown) rice, for example.
