- 200 ml oil (sunflower oil)

- 1 garlic clove(s), chopped
- 1 tbsp tomato paste

Grill the eggplant in a preheated oven at 180°C. It’s cooked when the skin turns slightly black or starts to flake – depending on the size of the eggplant, this will take between 35-45 minutes. Peel the grilled eggplant. Combine the chopped onion, lemon juice, garlic cloves, tomato paste, sunflower oil, and eggplant in a tall bowl and blend. Finally, season with salt and serve.
