Turkish semolina dessert

Ingredients for 5 servings:

  • 500 ml milk, 3.5% fat
  • 5 tbsp semolina (durum wheat)
  • 5 tbsp sugar
  • 10 biscuits (butter)
  • 3 tbsp almonds, chopped

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Bring the milk, sugar, and durum wheat semolina to a boil in a saucepan, stirring constantly. Stir for another 5 minutes to prevent sticking. Rinse a casserole dish or small dessert molds with cold water. This prevents the pudding from setting. Pour half of the pudding into the dish(es), top with the biscuits, and then pour the remaining mixture over the mixture. Decorate with the almonds and refrigerate until the dessert is firm. If you’re using a casserole dish, you can cut the pudding into diamond shapes and divide them between dessert plates. The semolina pudding tastes even better with a tablespoon of applesauce, red fruit compote, or cherry compote.
