Vanilla chia pudding with fruit

Ingredients for 2 servings:

  • 250 ml milk
  • 4 tbsp chia seeds
  • some vanilla extract
  • 1 handful of fruit of your choice

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes

Pour the milk into a small bowl. Then add the chia seeds and a few drops of vanilla extract to the milk and mix everything together. Place the mixture in the refrigerator for at least two hours so that the chia seeds can swell and a pudding forms. Shortly before serving, stir the pudding well with my whisk until all lumps have dissolved and the mixture is smooth. Cut the chosen fruit into small pieces and place it on top of the chia pudding. The pure pudding will keep in the refrigerator for a good week. You can use soy milk, almond milk, or cow’s milk, depending on your preference. I personally like to eat the pudding with cow’s milk for breakfast and prepare it the night before.
