Vanilla pudding with blueberries and mascarpone

Ingredients for 6 servings:

  • 1 packet of vanilla pudding powder
  • 500 ml milk
  • 50 g sugar
  • 125 g mascarpone
  • 300 g blueberries
  • 50 g almond flakes

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Make a vanilla pudding with the milk, custard powder, and sugar, as directed on the package. Stir the mascarpone into the hot pudding, cover with plastic wrap (place directly on top of the pudding to prevent a skin from forming), and let the pudding cool. Now roast the almonds in a non-stick pan over medium heat until golden brown, then let cool. Sort and wash the blueberries. Stir the pudding cream until smooth and layer it alternately with the blueberries and almond slivers in dessert glasses. Refrigerate until ready to serve.
