Spaghetti Köhler style

Ingredients for 1 servings:

  • 1 egg yolk
  • 100g spaghetti
  • 40 g pancetta, Serrano ham or smoked bacon
  • 40 g Parmesan or Pecorino
  • olive oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Put the egg yolk in a large bowl. Grate the Parmesan cheese and add it to the egg yolk. Mix the Parmesan and egg yolk with a good grind of pepper. Cut the bacon into fine strips. Cook the spaghetti in a pot of well-salted water and lightly fry the ham in a pan or small saucepan with a splash of olive oil. Then add the ham to the egg and Parmesan cheese. When the spaghetti is cooked, add about 1/2 ladle of the pasta water to the bowl and mix it with the egg yolk, Parmesan cheese and bacon to make a sauce. Drain the spaghetti and add it to the bowl. Toss the mixture together either with a spoon or simply with the bowl until everything is evenly distributed. Serve immediately.
