Vegan apple pie

Ingredients for 1 servings:

  • 1 lemon(s), organic, zest and juice
  • 3 large apples
  • 300 g flour
  • 150 g cane sugar
  • 1 tsp vanilla sugar
  • 60 g hazelnuts, grated
  • 2 tsp baking powder
  • n. B. Salt
  • 300 ml soy milk (soy drink)
  • 100 ml olive oil
  • 2 tbsp applesauce
  • 1 shot of carbonated mineral water
  • Fat for the mold
  • Powdered sugar for dusting

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes

Preheat the oven to 180°C (top/bottom heat). Grease a baking pan thoroughly. Grate the lemon zest and squeeze the juice into a bowl. Peel the apples, halve them, and remove the cores. Halve the halves again and carefully score the tops of the apple pieces with a knife. Be careful not to cut the apple pieces. Then add the apple pieces to the bowl with the lemon juice. Mix the flour, sugar, vanilla sugar, grated hazelnuts, baking powder, and salt in a bowl. In a second bowl, combine the soy milk, olive oil, and apple puree. Add the dry ingredients and mix quickly. Add a splash of mineral water and mix briefly. Pour the batter into the prepared pan and arrange the apple pieces on top, cut side up. Bake the apple pie in the preheated oven on the middle rack for about 60 minutes. Do the skewer test before removing it from the oven. The pie tastes delicious dusted with powdered sugar.
