Vegan cheese for grilled cheese toast

Ingredients for 2 servings:

  • 50 g sunflower margarine, vegan
  • 30 g cornstarch
  • 250 ml vegetable stock
  • 3 tbsp, heaped nutritional yeast
  • e.g. curry powder
  • possibly salt, soy sauce or Maggi

Instructions

Working time approx. 5 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 5 minutes; Total time approx. 2 hours 10 minutes

Melt the margarine in a small, non-stick saucepan, whisk in the cornstarch, and add the vegetable stock. Before the mixture thickens, quickly add the nutritional yeast. A dash of curry will give it a nicer color. Salt, soy sauce, or Maggi can be added if desired. Stir for a while longer, then pour the mixture into a small dish and let it cool. It’s not a sliced ​​cheese, but more of a spreadable cheese. Ever since my daughter decided to become vegan, I’ve been looking for a cheese substitute for her beloved grilled cheese toasties. When I put this cheese substitute between slices of three-grain toast spread with margarine on the outside and fry them in a pan, my daughter claims it’s very similar to the original cheese toastie. It’s a delicious snack for vegans, though.
