Vegan French Dressing

Ingredients for 4 servings:

  • 1 dl soy milk (soy drink)
  • 4 tbsp vinegar
  • 2 dl oil
  • 2 dl vegetable broth
  • 1 onion(s)
  • 2 cloves garlic
  • 1 tbsp mustard
  • herbal salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Roughly chop the onion and garlic, then simmer in the vegetable stock until very soft. Remove from the heat and let cool. Pour the soy milk into a tall container and add 1 tablespoon of vinegar. Let stand briefly. The soy milk should curdle slightly; this is desirable. Then add the mustard and salt and blend briefly with a hand blender. Pour in the oil in a thin stream, continuing to blend. The mayonnaise will become very thick. Add the cooled vegetable stock, onions, and garlic to the mayonnaise and blend until smooth. Season to taste with the remaining vinegar and, if desired, salt and herbs.
