Vegetable stew with Cabanossi

Ingredients for 4 servings:

  • 500 g bacon, streaky, smoked
  • 4 m.-sized onion(s)
  • 1 ½ liters of water
  • e.g. vegetable broth, instant
  • 3 cloves garlic
  • 5 m.-sized potatoes
  • 1 kg vegetables of your choice
  • 1 pair of Cabanossi
  • pepper
  • Thyme
  • olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the bacon into strips and the onions into large cubes. Cut the vegetables (e.g. carrots, celery, cauliflower, broccoli, snow peas, broad beans) and the Cabanossi into bite-sized pieces. Peel and dice the potatoes. Prepare the vegetable stock. Fry the bacon and onions in a little olive oil. As soon as they start to smell brown, add the garlic cloves and thyme and simmer briefly. Add the stock, bring to a boil, then simmer gently for 15-20 minutes (the bacon will then be nice and tender). Add the diced potatoes, bring to a boil, then add the vegetables and simmer gently again. Finally, add the Cabanossi and season with pepper. The stock, bacon, and Cabanossi mean that little or no salt is needed.
