Vegetarian Bolognese sauce

Ingredients for 4 servings:

  • 4 large carrots
  • 1 onion(s)
  • 3 cloves garlic
  • 3 stalk(s) celeriac
  • 1 can of tomatoes, chopped
  • 220 cl white wine
  • 1 bay leaf
  • 2 tbsp oregano
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 1 hour 45 minutes

Dice the onions, garlic, carrots, and celery. Sauté in olive oil and pour in the white wine. Add 1 can of chopped tomatoes or the flesh of 8 peeled and seeded tomatoes. Add the bay leaf, 2 tablespoons of oregano, salt, and pepper. Simmer for one hour. Then remove the bay leaf and briefly blend the sauce with an immersion blender; make sure the sauce doesn’t become a mush. Season with oregano and white wine to taste and simmer for another 20 minutes. If you follow the instructions exactly, the flavor will be like a Bolognese with meat.
