Warm breakfast porridge with apple and elderberry puree

Ingredients for 2 servings:

  • 200 ml milk
  • 2 tbsp sugar
  • ½ tsp cinnamon powder
  • 3 handfuls of oat flakes
  • 2 tbsp buckwheat
  • 2 tbsp chia seeds
  • 1 handful of nuts of your choice, chopped
  • 2 apples, sour
  • 150 g elderberries, frozen
  • 2 tbsp sugar
  • Orange zest(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

A porridge with buckwheat, elderberry, apples and chia seeds

For the purée, caramelize the 2 tablespoons of sugar in a saucepan and add the frozen elderberries. Reduce the heat and stir frequently. Meanwhile, peel and slice the apples. Add them to the elderberries and simmer over low heat. Deglaze with apple juice or water, if desired. For the porridge, heat the milk in a saucepan, add the cinnamon and sugar, and bring to a simmer. Add the remaining ingredients and simmer over low heat for about 15 minutes, stirring occasionally. Add more milk or oatmeal for your desired consistency. Then combine the purée and porridge, pour into a bowl, and garnish with orange zest.
