Whole Food: Kohlrabi and Spelled Flake Patties

The patties

  • 40 g Spelled flakes
  • 300 ml Water
  • 1 tablespoon Grained vegetable broth *
  • 4 tablespoon Kohlrabi vegetables fully cooked
  • 1 piece Onion
  • 1 piece Clove of garlic
  • 2 piece Eggs
  • 2 tablespoon Spelled flour type 630
  • 1 teaspoon Dried herb mixture **
  • Salt and pepper
  • Rapeseed oil

The vegetable

  • 1 piece Yellow pepper
  • 1 piece Red pepper
  • 1 piece Fresh onion
  • 2 piece Garlic cloves
  • 2 tablespoon Extra virgin olive oil
  • 2 tablespoon Balsamic vinegar dark
  • 2 tablespoon Extra virgin olive oil
  • 1 tablespoon Butter
  • Salt and pepper

The garlic butter

  • 75 g Butter
  • 2 tablespoon Extra virgin olive oil
  • 2 piece Garlic cloves
  • Salt and pepper

The patties

  1. Bring the water with the granulated vegetable stock * to a boil. Stir in the spelled flakes and simmer gently for about 20 minutes. Turn off the stove and use the residual heat to swell.
  2. Puree the kohlrabi vegetables – other vegetable scraps can of course also be used. Peel and finely dice the onion and garlic. Sweat in a little rapeseed oil. Add the vegetables and onion-garlic mixture together with the eggs to the spelled porridge, season with salt and pepper and stir in the flour.
  3. Heat the oil in a pan and process the dough into patties in portions. Keep the finished parts warm.

The vegetable

  1. Quarter the peppers, remove the skin and seeds and cut into bite-sized pieces. Peel the onion and garlic, cut the onion into half rings and the garlic into small cubes.
  2. Heat the olive oil in a pan and slowly cook the vegetables while stirring. Pour some water, if necessary. Deglaze with balsamic vinegar, season with salt and pepper and finally pour olive oil over again and stir in a piece of butter. Keep warm.

The garlic butter

  1. Peel and finely chop the garlic. Mix this together with the oil and salt and pepper to a paste. Chill until use.

The finish

  1. Season the lukewarm vegetables to taste and serve them together with the patties and the garlic butter on warmed plates.
