Ingredients for 1 servings:
- 300 g wheat flour (wholemeal)
- 200 g rye flour (wholemeal)
- 100 g rye meal, fine
- 100 g cereal flakes (oats, four-grain, …)
- 100 g sunflower seeds
- 600 ml water
- 1 cube of yeast, fresh
- 15 g salt
- 2 tbsp beetroot
- 2 tbsp white wine vinegar
- 1 tbsp bread spice mix

Done quickly, as there is no waiting time
Mix all the dry ingredients together. Crumble the yeast and add it along with the wet ingredients. Knead everything thoroughly using the dough hook on a hand mixer. This takes about 5 minutes. The result should be more of a thick slurry than a traditional dough. The amount of water is a rough estimate; depending on the consistency of the flour and bran, you may need more. The consistency of the dough is crucial so that the bread can rise well during baking, but the bread doesn’t become too sticky. Pour the dough into either one large or two small loaf pans and score the surface lengthwise with a knife. Depending on the pan, it is recommended to line them with baking paper to prevent sticking. The dough does not need to rise; it goes into a cold oven. The baking time at 200 degrees Celsius (400 degrees Fahrenheit) with top/bottom heat is about 75 minutes, depending on the oven and pan. Silicone pans usually take less time to bake. I check whether the bread is fully baked by inserting a wooden skewer into the top of the loaf. If no dough sticks to the skewer when you pull it out, it’s done. The “tapping test” is also helpful: take the bread out of the oven and tap the surface with your finger. If it sounds rather dull, the bread isn’t ready yet. It should sound hollow. After baking, remove the bread from the pan and let it cool on a wire rack for at least 2 hours before slicing. Variations: You can increase the rye content if you prefer a richer bread. Or you can replace some of the wheat flour with spelt, which is also very tasty. Instead of sunflower seeds, you can also use flaxseed, pumpkin seeds, sesame seeds, or nuts.
