Almonds are incredibly healthy. But normally we absorb only a fraction of the nutrients – unless we soak them.

How healthy are almonds?

Soaking mimics the emergence of a new plant. The seeds are being prepared for germination. Because almonds have a particularly clever property: they retain their nutrients until the seed needs them for growth. This is done with the help of so-called enzyme inhibitors, which block the absorption of important nutrients.

The almonds are easier to digest

As healthy as they are, nuts are heavy on the stomach. In the case of almonds, this is partly due to the shell. Soaking helps here too: the shell can then be easily removed.

Soaked almonds taste better

Finally, the taste also benefits. Soaked almonds develop a very special aroma, they usually taste finer and more intense. The sweetness of the nut also comes into its own.

What is the best way to soak almonds?

Almonds should always be soaked in twice the amount of water. Nut soak times vary.

Almonds need a lot of time: They should be in the water for between six and eight hours, so it is advisable to simply let the almonds soak overnight.
