Wild yeast from apple wedges
- 1 Glass
- 1 Apple – Boskoop (small) OR
- 0,5 Apple – Boskoop (large)
- 750 ml Filtered water
Preface
Wild yeast from fruit
- As everyone knows, there is plenty of sugar in fruit, i.e. the food for yeast to grow. Always choose the juiciest fruits of the season that have the strongest scent. In order to successfully produce wild yeast, you simply break down the yeast (fruit) by crushing or pureing it.
- The first time apples are ideal for trying out, as they can be cultivated easily and reliably as wild yeast. This special yeast water gives bread a crisp, fresh apple aroma, which you can also smell. If you puree the apples, you get a very active wild yeast that makes dough rise particularly nicely with a wide variety of ingredients.
Wild yeast from apple wedges
- Depending on the size of the apple, take either the whole or half of it. Wash and remove the core (you can use it if you like). Then it is cut into wedges or you can do it with an apple cutter.
- Then you put it in a sterilized jar with a screw cap. Now fill up with the filtered water and screw tight with the screw cap / lid.
Ferment
- Leave the sealed jar at room temperature for a while without opening the lid. Turn over several times a day so that the liquid, i.e. the water, mixes and can sit down again. You can watch how the whole thing changes.
- After about 4 to 5 days, bubbles should be visible and the color in the glass has become cloudy, this is a sign that fermentation has started. Now the lid of the jar is loosened slightly so that our wild yeast from apple wedges can be supplied with oxygen. When it is ready and it hisses & foams when opened, then it is ready for use.
General information
- In spring / summer it takes about 4 to 5 days. 7 to 8 days in autumn / winter. Should it stagnate for any reason, add one (1) teaspoon of sugar or honey. So that it doesn’t break, put the yeast water in the refrigerator until it is baked.
- Here, too, loosen the lid slightly so that the gases that develop in the jar can escape. If you want to bake then, you have to take the glass out of the refrigerator to room temperature and check whether the wild yeast from apple wedges is still active & foams well.
