Wolpertinger bacon dumplings

Ingredients for 4 servings:

  • 10 dry rolls or equivalent dumpling bread
  • 500 ml milk
  • 100 g bacon, streaky
  • 1 onion(s)
  • 2 eggs
  • 50g salami
  • 2 tbsp parsley
  • breadcrumbs
  • salt and pepper
  • 1 pinch of nutmeg

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cut the rolls into thin slices and pour the warm milk over them. Cover and let stand for 30 minutes. Dice the bacon and onion and fry them together in a frying pan over low heat. Add this mixture, along with the eggs, finely chopped salami, and parsley, to the dumpling dough. If the dough is too soft, stir in breadcrumbs. Season to taste and knead thoroughly. Form dumplings with wet hands. Let stand in lightly simmering salted water for 20 minutes. Serve the dumplings with tomato or mushroom sauce.
