Ingredients for 1 servings:

  • 170 g semi-skimmed margarine
  • 175 g sugar
  • 1 tsp sweetener
  • 2 eggs
  • 2 tsp lime juice
  • 75 g low-fat yogurt
  • 320 g flour
  • 3 tbsp cornstarch
  • 1 tsp baking powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Suitable for WW, 1 point per cookie, for 50 pieces

Preheat oven to 170°C fan/convection oven. Line a baking sheet with baking paper. Beat margarine with sugar, sweetener, and eggs until fluffy. Stir in lime juice and yogurt. Combine flour, cornstarch, and baking powder, sift on top, and mix well. Place small mounds of dough on the baking sheet with 2 teaspoons and bake in the preheated oven for 10 minutes.
