Ingredients for 1 servings:
- 150 g zucchini
- 5 tbsp oat flakes
- 200 ml soy milk (soy drink) or water
- ½ tsp cinnamon
- sweetener
- Cocoa powder, protein powder or desiccated coconut
- 1 banana(s) or 1 handful of berries, frozen or fresh

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Zucchini with oat flakes – a vegan breakfast
Grate the zucchini. Mix the oats with the soy milk, cinnamon, and sweetener, if desired. Heat with the zucchini on the stovetop. Stir in cocoa powder, protein powder, or desiccated coconut, if desired. For a fruity zoat, stir in half a mashed banana or berries. Add more liquid if necessary. Simmer the zoat until creamy. Serve with your choice of toppings.
