Ingredients for 3 servings:
- 1 m.-large zucchini
- 150 g black olives marinated with herbs
- 200 g feta cheese, in cubes
- Tarragon leaves
- Oil (rosemary oil)
- Balsamic cream
- Salt and pepper, from the mill
- Madras curry powder
Instructions
Working time approx. 10 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Wash and trim the zucchini, and cut into 1-2 cm cubes. Remove any large seeds. Finely chop the garlic and fry in a pan. Add the zucchini cubes and fry. Season with salt, pepper, and curry powder. Meanwhile, halve the olives and mix with the cheese cubes. After frying, let the zucchini cool in a bowl. Add the olives and feta cheese and mix again. Drizzle with rosemary oil and season with salt and pepper. Finally, garnish the salad with a drizzle of balsamic vinegar.
