Zucchini tagliatelle with tomato sauce

Ingredients for 2 servings:

  • 1 large zucchini
  • salt water
  • 1 jar tomato sauce
  • 250 g minced meat
  • 1 onion(s)
  • e.g. Parmesan, grated
  • 3 cloves garlic
  • Spice(s) of your choice

Peel 1 very large (garden) zucchini with a vegetable peeler and discard the skin. Continue peeling the zucchini down to the core to create long, ribbon-like strips. Cook these strips in salted water until tender, just like pasta. Chop the onion and garlic and sauté with the ground beef. Add the tomato sauce to create a “quick meat sauce.” Season to taste. Pour the sauce over the zucchini strips and sprinkle with grated Parmesan cheese, if desired. A delicious, carbohydrate-free alternative to pasta with tomato sauce that’s quick to prepare. Of course, this dish can also be combined with any other pasta sauce.
