Zucchini – Tomato – Pan

Ingredients for 1 servings:

  • some oil
  • 1 thick zucchini
  • 2 large tomatoes
  • 1 small onion(s)
  • 1 cup of cream
  • salt and pepper
  • 2 bay leaves
  • Thyme, other herbs as desired

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Heat the oil in a pan. Quarter the zucchini lengthwise, finely chop the onion, and peel and dice the tomatoes. Briefly fry the onions and zucchini in the pan. Pour in the cream and add the tomatoes. Add the bay leaves and herbs and season with salt and pepper. Simmer for about 10-15 minutes. Remove the bay leaves before serving. Serve with baguette.
