Light and fluffy mandarin orange yogurt muffins

Ingredients for 1 servings:

  • 1 can of mandarin orange(s), sweetened with sweetener
  • 3 eggs
  • 180 g sugar
  • 1 packet of vanilla sugar
  • 150 g margarine (half-fat margarine)
  • 125 g low-fat yogurt
  • 180 g flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 35 g cake icing, white

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 200°C (180°C fan-assisted oven) and line a muffin tin with paper baking cups. Drain the mandarins in a sieve, reserving 12 attractive mandarins for decoration. Beat the eggs with sugar and vanilla sugar until frothy, then mix with the margarine and yogurt until smooth. Separately, mix the flour with baking powder and baking soda, sift it into the egg mixture and stir in, then carefully fold in the mandarins. Pour the batter into the muffin tins and bake for 20-25 minutes (middle rack). Once cooled, melt 35g (1/2 pack) of white cake icing (in a plastic bag), snip off a corner, place a dollop of icing in the center of each muffin, and place a mandarin orange on top.
