Ingredients for 2 servings:
- 1 m.-large zucchini
- 1 garlic clove(s)
- 1 tbsp oil
- 100 ml water
- 150 ml cream or milk
- 1 tbsp tomato paste
- 1 pinch of thyme
- herbal salt
- pepper
- 1 can white beans
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Dice the zucchini and garlic. Sauté both in a pan with oil for about 8-10 minutes. Pour in water and milk or cream. Add the tomato paste, beans, and spices and cook for another 5 minutes. Season to taste and serve. It goes well as a vegetable side dish with pasta or rice.
