Jam & Co: Wine and Elderflower Jelly

  • 1 l Semi-Dry white wine
  • 2 Organic lemons
  • 650 g Preserving sugar 3: 1
  • 25 Elderflower umbels
  1. Gently shake out the cones to pick out beetles. Put in a container. Wash the lemons and cut into thin slices, place on the flowers. Pour wine over it, press everything down a little and let it steep for 3-4 days.
  2. First strain through a sieve, then through a cheesecloth. Pour the liquid into a large saucepan, stir in the preserving sugar and let it simmer for 4 minutes. Pour into glasses, screw on the lid immediately and leave on the lid for 15 minutes.
