Jam & Co: Wine and Elderflower Jelly

- 1 l Semi-Dry white wine
- 2 Organic lemons
- 650 g Preserving sugar 3: 1
- 25 Elderflower umbels
- Gently shake out the cones to pick out beetles. Put in a container. Wash the lemons and cut into thin slices, place on the flowers. Pour wine over it, press everything down a little and let it steep for 3-4 days.
- First strain through a sieve, then through a cheesecloth. Pour the liquid into a large saucepan, stir in the preserving sugar and let it simmer for 4 minutes. Pour into glasses, screw on the lid immediately and leave on the lid for 15 minutes.
