Apple compote with dates and cinnamon

Ingredients for 4 servings:

  • 2 kg apples
  • 1 tbsp cinnamon
  • 5 dates (Medjool)
  • 1 lemon(s), untreated, zest and some juice
  • 300 ml water, maybe a little more

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Peel, core, and finely chop the apples. Pit the dates. Place the apples, dates, cinnamon, and water in a large pot and bring to a boil briefly. Then reduce to a simmer over medium heat with the lid partially closed, stirring occasionally. When the desired consistency is reached, mash everything with a potato masher. If you prefer, you can also use a hand blender. Then add the lemon zest and lemon juice, if desired. The dates add a very pleasant sweetness, so simply season to taste with the lemon juice. After cooking, immediately transfer to clean screw-top jars, seal tightly, and turn upside down for about 5 minutes. Then turn the jars upside down and let cool completely. Store in the refrigerator.
