  • 3 tbsp cognac

  • 2 cup(s) coffee, strong
  • Cognac, for flavoring
  • 60 ladyfingers

Instructions

Whisk the egg yolks with the sugar until fluffy, then stir in the mascarpone and flavor with about 3 tablespoons of cognac. Then fold in the stiffly beaten egg whites with a wooden spoon. Dip the sponge fingers into the flavored coffee (briefly, otherwise they will become too soft) and place them in a bowl, alternating with the mixture. It’s best to refrigerate overnight; dust with cocoa powder before serving.
