Ingredients for 4 servings:
- 4 chicken breast fillets
- 8 tomatoes
- 4 balls of mozzarella
- 1 handful of basil leaves
- 4 tbsp olive oil
- salt and pepper
- oregano
- chili salt
- olive oil
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes
for a casserole dish
Wash the chicken breast fillets and pat dry. Make four to five slits (careful, do not cut through) at intervals of approximately 2 cm. Season the meat well with salt and pepper. Thinly slice the tomatoes and mozzarella. Wash the basil leaves and shake dry. To fill the chicken fillets, place a tomato slice, a mozzarella slice, and two basil leaves into each pocket. Grease a baking dish with olive oil and place the stuffed chicken fillets in the dish. Season with salt and pepper to taste, then drizzle with the oregano, a little chili salt, and olive oil. Bake in a preheated oven at 180°C (convection oven) for approximately 40 minutes on the middle rack. Tip: If you have leftover tomatoes and mozzarella, simply line the baking dish with them. This goes perfectly with a herb or garlic baguette and a green salad.
