Apple – Almond – Muffin

- 300 g Grated tart apple
- 3 Eggs
- 75 g Sugar
- 2 Msp Cinnamon
- 1 Tl Baking powder
- 75 g Ground almonds
- 75 g Spelled flour
- Separate the eggs and beat the egg whites until stiff, set aside.
- Beat egg yolks with sugar and 3 tablespoons of hot water until frothy
- Mix the flour, almonds, baking powder and cinnamon and stir into the egg mixture with the grated apples.
- Carefully fold in the egg whites at the end.
- Spread in 20 muffin molds and bake at 160 ° C for 20 minutes.
