Apple curd pancakes

Ingredients for 10 servings:

  • 1 egg(s)
  • 50 g sugar
  • 250 g quark (cottage cheese)
  • 1 pack of pudding powder, vanilla
  • 1 tbsp lemon juice
  • 1 pinch of salt
  • 2 tbsp rum
  • 150 g apple
  • Clarified butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Beat the egg and sugar until thick and creamy. Stir in the curd cheese, pudding mix, lemon, salt, and rum, then grate the peeled apple. Heat the clarified butter in a non-stick pan and add 1 heaped tablespoon of batter to each pancake, pressing it down slightly. Reduce the heat to low and bake slowly (overheating will burn the pancakes). Sprinkle with powdered sugar. Applesauce with a dollop of cranberry jam or raspberry curd goes well with this.
