Ingredients for 4 servings:

  • 1 kg potatoes, floury
  • 4 large onions
  • 1 ring/e black pudding, fresh or smoked (in Cologne it is called Flönz)
  • Milk
  • Salt
  • pepper
  • butter
  • nutmeg
  • 1 jar applesauce, or homemade
  • oil

that’s how my mom makes it

The name comes from Himmel(apples) Un (black pudding) Ädd (potatoes) Ärpel with Blootworscht Potatoes with black pudding and apple sauce Wash the potatoes and make jacket potatoes. Let them cool and then peel them. Heat the milk (do not boil). Mash the potatoes with milk, butter, salt, pepper and nutmeg. Peel the onions, cut/slice them and fry them in a pan with oil. Cut the black pudding into 0.5 to 1 cm thick rings, add them to the onions and fry until done. You can also cut the black pudding thicker, then dip the cut sides in flour and fry (that’s what I do when I use fresh black pudding). Put a dollop of KaPü on a plate, pour the black pudding and onion mixture over it and add a dollop of apple sauce.
