Bacon and caper spaghetti

Ingredients for 4 servings:

  • 500g spaghetti
  • 200 g bacon cubes
  • 1 bunch of spring onions, cut into fine rings
  • 1 tbsp sugar
  • 8 tbsp balsamic vinegar
  • 1 small jar of capers, coarsely chopped
  • Black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cook spaghetti in plenty of salted water according to the package instructions. Meanwhile, fry the bacon cubes in a pan over medium heat until crispy. Add the spring onions and fry briefly. Sprinkle the sugar over the bacon and onion mixture, caramelize briefly, then deglaze with balsamic vinegar and reduce briefly. Remove about 5 tablespoons of the pasta water and add it to the sauce. Add the capers. Season to taste with the caper liquid and freshly ground pepper. Drain the pasta and serve with the sauce.
