Ingredients for 4 servings:
- 400 g feta cheese
- 6 figs, dried
- 2 lemons (organic)
- 6 tbsp olive oil
- 1 tbsp mint, fresh, chopped
- salt and pepper

Wash the organic lemons, halve them lengthwise, cut them into thin slices, and sauté them in hot olive oil. Slice the dried figs into strips, add them, and bring everything to a boil briefly. Season with salt and pepper and stir in the chopped mint. Pour a few spoonfuls of the marinade into an ovenproof dish, spread the diced feta cheese on top, and pour over the remaining marinade. Let the whole thing sit in the refrigerator for as long as possible (24 hours). Bake in the oven at around 200°C for about 10 minutes. Admittedly, this is a very fruity and fresh version of feta cheese. Serve with fresh baguette or pita bread, falafel, and tahini sauce…
