Banana-nut foam

Ingredients for 4 servings:

  • 200 g hazelnuts
  • 2 tbsp honey
  • 1 pinch of cinnamon
  • 3 large bananas
  • 1 tbsp honey
  • ½ lemon(s), the juice
  • ¼ liter whipped cream
  • Cinnamon
  • banana(s)
  • Nuts

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Brain – Food

Roughly chop the nuts and mix with the honey and cinnamon, then set aside. Peel the bananas, cut them into pieces, and puree them with the honey and lemon juice. Whip the cream until stiff peaks form and stir in the banana puree. Layer the banana foam and honey nuts alternately in dessert bowls and refrigerate until ready to serve. Garnish with banana slices and chopped nuts, and sprinkle with cinnamon if desired. It makes an ideal office snack; simply store it in an airtight container.
