Dry rub for seasoning spare ribs

Mix all ingredients and transfer to an airtight container (an old, clean jam jar will also do). If you prefer a sweeter rub, simply add 2 tablespoons of brown sugar. Always rub the spare ribs thoroughly with the rub at least 12 hours before use and then let it sit in the refrigerator. Remove from the refrigerator about 2 hours before grilling and let it sit at room temperature.
