Ingredients for 2 servings:

  • 5 bratwurst, fresh
  • 2 large onions
  • 125 ml vinegar (wine vinegar)
  • ½ liter of water
  • ½ liter white wine, dry
  • 2 bay leaves
  • 2 carnations
  • 10 juniper berries
  • 10 peppercorns
  • 1 pinch of salt
  • 2 tbsp sugar

Peel the onions and slice them into rings. Cook them along with the remaining ingredients in the wine vinegar, white wine, and water until softened. Reduce the heat and let the sausages simmer for about 10 minutes. Do not boil, or they will burst! Arrange the sausages in the broth in a large bowl and serve. Serve with a variety of mustards, depending on your taste, and a baguette. Tip: reheat the next day—it doesn’t get any better (so plan for more sausages, etc.).
