Bread: Baguette
The perfect bread: baguette recipe with a picture and simple step-by-step instructions.
Pre-dough:
- 150 g Wheat flour 812
- 150 g Water
- 3 g Yeast
- 3 g Salt
Main dough:
- 250 g Wheat flour 550
- 100 g Wheat flour 812
- 150 ml Water cold
- 7 g Salt
- 10 g Sugar
- 10 g Yeast
- 25 ml Olive oil
- For the pre-dough, mix the ingredients together and place in a bowl, cover with cling film and place in the refrigerator overnight.
- Put the starter dough with both flours and the other ingredients in a bowl and knead with the food processor for 10 minutes. Then knead again quickly for 5 minutes until the dough separates from the edge and makes a homogeneous impression.
- Now cover the dough and let it rise in a warm place for about 2 hours. Now shape the dough into 2 baguettes, place on a floured tea towel and fold in. Let rise until its volume has doubled.
- Preheat the oven to 220 ° C (with baking stone). Put a cup of water in the oven. Now put the bread on the baking stone and bake for 30 minutes.
