Ingredients for 4 servings:
- 4 chicken legs
- 1 onion(s)
- 4 oranges
- 1 tbsp honey
- ½ pineapple, cut into small pieces
- 40 g desiccated coconut
- oil
- butter
- salt and pepper
Instructions

with oranges, pineapple and coconut
Fry the chicken thighs in 3 tablespoons of oil and 25g of butter until golden brown. This takes about 15 minutes over medium heat. Then add the roughly chopped onion and fry with the chicken for another 5 minutes. Drizzle with 1 tablespoon of honey and deglaze with the juice of 4 oranges. Add the grated zest of one orange. Simmer for 5 minutes over low heat, then add the pineapple pieces. Sprinkle half of the desiccated coconut over the top, season with salt and pepper, and simmer for another 5 minutes. When the chicken thighs are ready to serve, sprinkle with the remaining desiccated coconut. This goes best with rice.
