Chocolate muffins the classic way

Ingredients for 12 servings:

  • 3 tbsp butter
  • 70 g dark chocolate
  • 200 g flour
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 2 tbsp cocoa powder
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 2 eggs
  • 150 ml milk
  • Salt

Preheat the oven to 180°C. Grease the holes in a muffin tin or line them with paper baking cups. Melt the butter in a small saucepan over low heat. Chop the chocolate. In a mixing bowl, combine the flour with the sugar, vanilla sugar, cocoa powder, baking powder, baking soda, and a pinch of salt. In a second bowl, whisk the eggs with the milk and butter. Add the egg mixture to the flour and cocoa powder mixture and mix with a whisk or a wooden spoon until all the ingredients are moistened. Fold in the chocolate. Fill the batter no more than 3/4 full into the holes in the muffin tin and bake the muffins on the middle rack of the oven for 20-25 minutes. Remove from the oven and let rest for about 5 minutes. Remove the muffins from the tin and let cool.
