Cold vegetable drink

Ingredients for 4 servings:

  • 250 g bell pepper(s), red
  • 200 g celery
  • 250 g bell pepper(s), yellow
  • 400 ml vegetable stock
  • 100 ml tomato juice
  • 6 ice cubes
  • 2 tbsp balsamic vinegar
  • 2 tbsp sugar
  • 1 pinch of salt
  • 1 pinch of chili
  • 150 ml mineral water

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and trim the bell peppers and celery, then cut them into small cubes. Using a hand blender, blend the diced vegetables with the vegetable broth, tomato juice, ice cubes, balsamic vinegar, sugar, and a pinch of salt. Season the vegetable drink with ground chili, pour into 4 glasses, and top up with mineral water.
