Cookies: Mango and Walnut Buns

  • 125 g White couverture
  • 100 g Dried mango
  • 100 g Chopped walnuts
  • 100 g Raw cane sugar
  • 1 piece Egg separated
  • 1 pinch Salt
  • 40 g Flour
  • Lemon glaze
  1. Beat the egg whites with a pinch of salt until stiff.
  2. Crush the couverture and let it melt in a water bath (not above 37 degrees). Use an appropriate bowl for this straight away.
  3. Cut the dried mango into very small pieces (2x 2 mm) and mix with the chopped walnuts, egg yolks, sugar and flour. Add the whole thing to the melted couverture and stir carefully.
  4. Lift the egg white into the mass and place small heaps with a teaspoon on a sheet lined with foil or paper (approx. 60 pieces) and dry in a preheated oven for approx. 45 minutes at 120 degrees rather than bake.
  5. Optional: Put a lemon glaze on each kiss.
