Couscous with pineapple and walnuts

Ingredients for 2 servings:

  • 300 ml milk
  • 110 g couscous
  • 1 small pineapple
  • 1 handful of walnuts
  • 2 tbsp honey or sugar
  • 1 pinch(s) cinnamon powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Bring the milk to a boil with a little honey or sugar. Stir in the couscous and turn off the heat. Let the couscous swell for about 15 minutes. Meanwhile, peel the pineapple and cut it into small pieces. Heat the honey in a pan over high heat, add the pineapple and walnuts, and caramelize. Serve the couscous on two plates, scatter the pineapple and walnuts over the top, and sprinkle with a little cinnamon. Tastes great as a dessert or for breakfast.
