Crunchy Spelled Bread

The perfect crunchy spelled bread recipe with a picture and simple step-by-step instructions.

  • 500 g Spelled flour type 630
  • 1 dice Fresh yeast
  • 270 ml Lukewarm water
  • 1 tsp Salt
  • 1 tsp Sugar
  • 2 tbsp Olive oil
  1. Mix the flour with the salt. Put the lukewarm water together with the sugar in the mixing bowl of the food processor and crumble and dissolve the yeast. Then add the 2 tablespoons of olive oil. Now add a third of the flour mixture and turn on the food processor.
  2. Gradually add the remaining flour and let the machine knead for at least 10 minutes. Then dust a proofing basket with flour and add the yeast dough and cover in a warm place for 30 minutes.
  3. Then carefully turn out onto a baking sheet lined with baking paper, cut crosswise at the top and then cover and let rise for 20 minutes. In the meantime, preheat the oven to 200 degrees.
  4. Then put the bread in the oven, pour half a liter of cold water onto the bottom of the oven so that it creates a really nice gush and bake for about 30 – 35 minutes. The bread is good if it sounds hollow when you knock on the bottom of the bread. Immediately brush the bread with a little cold water and allow to cool well on a wire rack.
