Preheat the air fryer to 160°C for 3 minutes, then place the sausage slices in the wire rack. Drizzle with oil. Fry for 5-6 minutes at 160°C, then toss, add 1 tablespoon of curry powder, and fry for another 5 minutes. Mix the sausage slices with the tomatoes, curry ketchup, 1 tablespoon of paprika, and herbs in the baking tray and cook for another 5-7 minutes at 160°C. Finely dice the shallots and sauté them in butter in a small saucepan with 1 tablespoon of curry powder and 1 tablespoon of paprika powder. Deglaze with Coca-Cola, reduce the liquid by half, and then top up with the stock. Reduce by half again. Add the peeled tomatoes and season with salt, pepper, and fresh herbs. Dust the currywurst with curry powder again if desired and serve with the sauce.
