Delicious shortbread cookies:

  • 250 g Soft butter (room temperature)
  • 200 g Powdered sugar

  • 1 packet Vanilla sugar
  • 2 tbsp Rum 40%
  • 300 g Flour
  • 100 g Grated white almonds
  • 1 bag Dark cake icing
  • Meat grinder with cookie attachment
  • Parchment paper
  • Aluminum foil
  1. Put powdered sugar (200 g) in a bowl. Add the butter (250 g) roughly cut and stir everything with the mixer / mixer until creamy. Add / stir in the egg yolks (4 pieces) and the rum (2 tbsp). Mix in the flour with the vanilla sugar (1 packet) with the grated almonds and gradually add / stir into the dough. Chill the dough for about 30 minutes and then gradually fill it into a grinder with a spray attachment. Make the shortbread biscuits (it is best to do it in pairs!) And place on a baking sheet lined with baking paper. Bake in the preheated oven at 175 ° C for about 8-10 minutes. Attention: Carry out a visual test again and again so that the biscuits are not baked too dark. Let the biscuits cool down, dip them in the cake icing (heated in the microwave here) and place on a sheet or tray lined with aluminum foil to dry. Place the cookies in a tin, separating each layer with baking paper.
