Ingredients
- 3 Palatinate / Augsburg / Regensburg
- 5 small Pickled gherkins
- 5 Shallots
- 1 tbsp Freshly chopped chives
- 1 tbsp Bavarian mustard
- 100 ml Pickled cucumber stock
- 0,5 Piri Piri chilli pepper, pitted and finely chopped
- Smoked salt
- Black pepper from the mill
- White balsamic vinegar
- Lemon olive oil
- 1 bunch Fresh radishes
Instructions
- Peel the skin off the sausage and cut into thin slices with the machine. Thinly slice the shallots and thinly slice the gherkins and the cleaned radishes.
- Using the magic wand, assemble approx. 150 ml of sauce from the cucumber stock, salt, pepper, mustard, vinegar, oil and chilli and season to taste. Mix all solid ingredients with the sauce and let it steep for a while
