Ingredients for 1 servings:
- 250 g oat bran
- 50 g wheat bran
- 1 tsp, heaped corn flour
- 1 tbsp, heaped sesame or flax seeds
- 5 eggs, size M
- 500 g low-fat curd cheese
- 50 g diced raw ham, as desired
- 1 tsp, leveled salt
- 1 pinch(s) of pepper
- 1 tsp, heaped baking soda
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour
First, whisk together the eggs, wheat bran, corn flour, sesame seeds, salt, and pepper in a bowl. If you want to add diced ham, fry them, deglaze with a splash of water, and then add them. Now stir in the quark until you get a pasty consistency. Only then add the baking soda and stir in, as it reacts very quickly and allows it to unfold its maximum effect. Finally, gradually stir in the oat bran flakes. At first, do this with a whisk, but towards the end, only use a large spoon, as the dough becomes extremely tough and sticky. Finally, pour the dough into a small loaf pan (I use a silicone one) and bake in the oven at 180°C (fan setting) for 45-50 minutes.
